Ingredients
2 onions
5 minced cloves of garlic
1/2 tsp of turmeric (እርድ)
1 tsp of minced ginger
1 green pepper (optional)
2-3 tsps of salt
1/2 cup of oil
1 cup of lentils (ምስር)
Directions
1. Chop the onions until they are well diced.
2. Put the lentils in a clear plastic container. Search through with your hands for any black or non-uniform colored lentils and throw them away.
3. Add 1 1/2 cups of water to the container of lentils. Rub the lentils with your hands and the water should change color. Drain the water and repeat this step 3 or 4 times until the water becomes close to clear. When you are done, drain the water one last time and keep the lentils aside for later use.
2. Put a medium sized pot on the stove and use medium heat. (Dial settings may vary)
3. Add the chopped onions to the pot, cover the pot, let cook for 5-7 minutes. Also, stir occasionally so that they do not stick. If the onions become dry, add a little(3-4 tsp) water. Onions should look translucent.
4. Add 1/2 cup of oil and stir for a couple of minutes. After a few minutes, add 1/2 tsp of turmeric. Cover pot with lid.
5. Add about half a cup of water to the pot, and also add minced ginger.
6. Let this cook for 7-10 minutes while keeping covered and stirring occasionally.
7. Add the lentils that you had cleaned previously and stir. Cover with lid.
8. After 3-4 minutes try stirring the mixture. Make sure none of the lentils are sticking to the bottom. Use a wooden spoon to scrape if some lentils are sticking. Add a half cup of water if the lentils is sticking. Cover pot with lid. Repeat this step 3-4 times, but do not add too much water.
9. Add 2 and 1/2 cups of water to pot and turn heat halfway between medium and high. Cover with lid. Leave this for about 5-7 minutes stirring occasionally. Try a spoonful of the lentils to taste if they have cooked.
10. Turn the heat back down to medium and cover pot. Add minced garlic to pot and stir occasionally.
11. Add 2-3 tsp of salt. Taste for yourself as amount may vary.
12. After about 10 minutes of occasional stirring, turn heat to low.
13. In the meantime, chop pepper lengthwise and then horizontally so that you have four pieces. Add to pot. Cover.
14. After about five more minutes of occasionally stirring, turn heat off.
