Ingredients
2 onions
2 carrots
4-6 potatoes
2 peppers
1/2 tsp turmeric (እርድ)
1 tsp minced ginger
5-6 cloves of garlic
1/2 cup of oil
2 tsp salt
Directions
1. Chop the onions until they are well diced.
2. Scrape the outer layer of the carrots with a knife.

3. Chop the carrots into medium sized pieces. Rinse with water.

4. Chop the garlic very well until it is diced.
5. Peel the potatoes, and chop them into medium sized pieces. Rinse with water.
6. Put the onions into a medium sized pot, and turn the heat up slightly past medium. (Dial settings may vary)
7. Stir occasionally. If the onions start to stick add a little (3-4 tsp) water.
8. After 5-7 minutes, the onions should be slightly translucent. Add 1/2 cup of oil. Continue stirring occasionally.
9. After 5 minutes, add 1/2 tsp turmeric and 1 tsp of minced ginger and the chopped garlic.
10. After 2-3 minutes, add carrot pieces. Stir occasionally.
11. If carrots pieces are sticking to the bottom of the pot, add 1/4 cup water.
12. Continue stirring occasionally for 8-10 minutes. Add water in 1/4 cup increments if sticking persists, but do not make the mixture watery. Cover pot when not stirring.
13. Add chopped potato pieces. Add 1 and 1/2 cups of water and turn heat slightly higher. About halfway between medium and high.
14. Add 2 tsps of salt
15. Cover pot and let cook for 10 minutes while stirring occasionally. Taste some potatoes to see if it is cooked. Add time if necessary.
16. Chop the peppers lengthwise and horizontally.

17. Add peppers to pot.
18. Turn heat on medium. Leave for 5 minutes while stirring occasionally.
19. Test taste a piece of potato. If it is still uncooked, add more time. If not, turn heat off.
