Ingredients
1 onion
1/2 tsp turmeric
1/4 cup oil
2 cloves garlic
1 green pepper
1 cup water
1 1/2 tsp of salt
1 cup of broken injera/ dirkosh
Directions
1. Chop the onion until it is well diced, and place the onion pieces in a medium sized pot.
2. Peel and chop the garlic cloves until they are also well diced and add to pot.
3. Place pot on stove and turn dial to slightly past medium heat (dial settings may vary).
4. Stir occasionally for 5-10 minutes.
5. After the onion and garlic pieces become translucent, add 1/4 cup of oil and 1/2 tsp of turmeric.
6. Let cook for 5-10 minutes while stirring occasionally.
7. Add 1 cup of water.
8. Add 1 1/2 tsp of salt and stir.
9. Turn dial halfway between medium and high heat, and let the contents come to a boil.
10. Let boil for 5 minutes.
11. Turn heat on low and begin adding broken up injera pieces.

12. Do not mix, but rather flip over the injera gently with a large spoon so that there are no dry parts left.
13. Cut a green pepper in half lengthwise and add to the mixture.
